Vegetable Couscous

Ingredients
1 14oz can vegetable broth2 cloves garlic1 lb baby red skin potatoes, in chunks1/2 t each: cinnamon, allspice, tumeric, cumin, and pepper1/2 t salt1 bunch scallions4 carrots, peeled, sliced into coins1/2 head cauliflower1 red bell pepper1 zucchini, sliced1/2-1 can diced tomatoes1 can chickpeas
Directions
Simmer ingredients through red bell pepper about 7-10 minutes
Next add zucchini, tomatoes, and chickpeas

PRETTY_FLUFFY: Haha you're right I don't include couscous but the original recipe calls to serve the veges over it,,, I find it tastes fine without it!
