Avocado Pesto

1 package whole wheat fettucine or linguine1 large avocado1 cup fresh parsley1/3 cup nutritional yeast2 cloves garlic, minced1/4 cup extra virgin olive oil2 tbsp water
Bring a large pot of water to a boil and cook pasta according to package directions.
Meanwhile, peel and pit the avocado and cut into blendable chunks and place in a food processor. Add parsley, garlic and water and blend. Add nutritional yeast and blend. With motor running, slowly drizzle in olive oil until smooth.
Drain pasta and reserve 1/4 cup of cooking water. Scoop pesto sauce and water onto the pasta and toss to coat. Serve immediately with salt or more nutritional yeast (or parmesan cheese for non-vegans).
