Ingredients

    1.5 cups dried lentils, rinsed
    2 yellow onions
    2 Tbsp olive or canola oil
    3 cups brown rice (cooked)
    1 (6-ounce) can of tomato paste
    1/2 cup ketchup
    1 tsp marjoram
    1 tsp sage
    1 tsp garlic powder
    1/2 cup cherry tomatoes, quartered
    3/4 cup tomato sauce (or pasta sauce)
    Additional ketchup or salt to taste

Directions

Rinse the lentil and cook them in 3-4 cups water until soft (about 30 minutes). Drain excess liquid. Mash lentils slightly.

Meanwhile, peel and chop both onions, cooking them on a skillet with the oil until translucent or golden.

In a large pot or bowl, combine mashed lentils with onions, rice, tomato paste, spices, quartered tomatoes, and pasta sauce until mixed well.

Press mixtured into a well-oiled loaf or baking dish. Spread 1/2 cup ketchup across the top. Bake at 350-degrees for 1 hour.

Add additional ketchup to taste. Will keep (covered) in the refrigerator for 7-10 days.

    I also used 3 cloves of garlic that I cooked w/ the onions. 1/2 cup of finely minced fresh flat leaf parsley that I mixed w/the lentilsand 1 cup of chopped canned mushrooms. YUMMY. - 5/30/09

    Yummy! I really enjoyed this. In order to cut down on prep time, I used pre-cooked lentils and pre-cooked brown rice - both from Trader Joe's - so this came together very quickly for me. Delicious! - 4/15/07

    I would make this again but i would use different spices. I also added oat bran to make it stick together in the loaf. It worked out perfect and was perfect to cut up into slices of loaf. - 7/12/08

    I enjoyed this more than I expected to. My husband is not a big fan of the texture, but he agreed that the flavor was excellent and he's going to try and get used to a little different texture. I'm going to stuff red pepper with the leftovers this weekend -- I think that will work well! - 11/30/07

    I use A LOT more herbs to this. Worchestire sauce and rosemary are big helps. If you have trouble mashing the lentils, mash them when there is still some water in the pan. It really works well for the adults and kids in my family. - 10/10/08
