Ingredients

    MARINADE

    2 TBS Red Wine Vinegar
    2 TBS Lemon Juice
    3 TBS Olive Oil
    1 TBS Fresh Basil, chopped
    1 TBS Fresh Parsley, chopped
    1 TBS, Dijon mustard
    2 clove garlic, minced
    salt & pepper to taste

    VEGGIES

    2 cups zucchini, sliced about 3/4" thick
    2 cups mushrooms, halved
    2 cups sweet onion, quartered & pulled into chunks 2-3 layers thick

    (you can use plenty of other veggies

Directions

Mix together marinade ingredients.

Chop veggies into similar size pieces and arrange in a shallow pan, preferably in a single layer.

Pour marinade over veggies & refrigerate for 2-4 hours.

Remove veggies from marinade & thread onto 8 skewers. Place skewers on BBQ and grill about 10-15 minutes until tender, brushing occasionally with leftover marinade.

Make eight one-skewer servings

    We made this exactly as written but for one tiny change. Due to a bumper crop of cherry tomatoes in our garden we added them to the skewers as well. We wrapped each tomato in a basil leaf before threading it onto the skewer. - 6/2/08

    We put this marinade on yellow squash, zucchini, onions and mushrooms and roasted them in the oven and we really liked it! It made enough marinade to coat a 9x13 pan of veggies. - 8/31/09

    Soak the skewers in water before adding the veggies and the ends won't burn on the grill as much. Threading the veggies first and then marinating will make it easier than fumbling with slippery veggies. My family loves adding bell peppers to this mix! - 5/13/10

    I marinade this in a lock & lock container so I can turn it over every 15 min. and I used a lot more different veggies. I even got the grandkids involved and they actually enjoyed eating veggies this way!! - 8/14/09
