Turkey Sausage, Kale, and Barley Soup

5 hot Italian turkey sausage links1 c pearled barley1 onion, chopped5 stalks celery, chopped20 baby carrots, chopped4 cloves garlic, diced1 can diced tomatoes5 cups chopped kaleDried oregano and basil, to taste8 cups chicken stick
Brown links in olive oil on all sides. Remove from pan and chop into bite size pieces. Add vegetables and sauté for a minute or two. Add tomatoes, kale, barley, and sausage to pot. Add stock and bring to a boil. Simmer covered for 50-60 minutes or until barley is soft.
