Quick Borscht

Ingredients
1 tablespoon olive oil1 14.5 oz can beets (NOT pickled beets)1 medium/small onion1 cup water2 tsp instant beef bouillon granules (or enough of your brand to make 1 cup double strength broth)
Directions
Heat the oil in a small saucepan. While the oil is heating, finely slice the onion and put in the oil to brown. When the onion is translucent and beginning to brown, add to it 1 cup of water and bring to a boil. Add the bouillon granules and the canned beets, including the broth from the can. Heat through to a simmer. Carefully pour hot soup into a heat safe blender and puree all until creamy. Serve immediately. *Note - this recipe has not been tested for reheating. Yields a generous 3 1/2 cups.
