Snap Pea and Corn Salad

Ingredients
3 cups sugar snap peas, trimmed1 cup frozen corn kernels, steamed1/2 red onion, sliced2 Tbsp lemon juice4 tsp olive oilsalt and pepper to taste
Directions
- Place the snap peas in a steamer basket and place in a saucepan with 1 inch of boiling water. Cover tightly and steam until crisp-tender, about 3 minutes.

- Remove snap peas from sauce pan and rinse with water until cool.

- Combine all ingredients.

Makes 4 1-cup servings.
