Jiffy Corn Muffin Mix GF Copycat

Ingredients
* 2/3 cup GF all-purpose flour* 1/2 cup fine grind cornmeal* 3 Tbsp granulated sugar* 1 Tbsp baking powder* 1/4 tsp salt* 2 Tbsp canola or grapeseed oil* 1 egg* 1/3 cup milk
Directions
Preheat oven to 400*F.

In a bowl, combine the dry ingredients. Add the wet ingredients and mix well to combine. Portion into greased muffin tin and bake for 15-20 minutes.

Allow muffins to cool in the tin for 5-10 minutes, then turn out onto a wire rack to finish cooling.

Serving Size: Makes 6 muffins.
