Basmati Chicken Rice Pilaf

12 ounces uncooked skinless chicken breast, cut into strips1 medium onion diced1 red bell pepper diced1 Tbsp. olive oil3/4 cup chicken broth4 cilantro sprigs and leaves chopped for garnish1 pouch pre-cooked basmati rice1/4 cup prepared curry powder1 cup plain nonfat yogurt
In plastic storage bag, combine curry powder, chicken, onion and bell pepper. Shake well to coat chicken and vegetables in curry powder.
Heat sauté pan over high heat and add tablespoon of oil. Add chicken mixture to pan and sauté until chicken is almost done, about 5 minutes.
Add in chicken broth and rice to pan. Heat until most of the chicken broth has absorbed, about 3 minutes.
Stir in yogurt and chopped cilantro into heated rice and chicken mixture.
Stir until well combined.
Serving Size: Serves 6; 1 cup each

This recipe calls for a LOT of curry (2 oz.) and I didn't realize it. When I went to make it, I only had 1 oz. so that's what I used. It was still plenty spicy and if you are sensitive to it, definitely do not use 2 oz. It was okay (had an aftertaste) but I don't feel the need to make it again soon. - 6/11/14

This was amazing, bursting with flavor. I used a frozen wild rice blend package which had a sauce and some vegetables too so I think that added to the flavor and sauciness a little. I added a jalapeno from the garden too and extra turmeric. Next time I'm going to try it with couscous. - 6/8/14
