2 quahog clams2 slices of bacon1/2 small onion diced1 piece of garlic...chopped small6 plain ritz cracker chips -crushed1 tablespoon Earth Balance Buttery Spread
Boil Quahogs in water until they open. Drain and cool. Chop raw bacon into little pieces and fry in small skillet with onions and garlic until bacon is crispy and browned. Remove bacon mixture from the pan and put on paper towels to remove excess grease. Remove all but a little grease from the pan and then add the crushed crackers and sauté until browned.
Remove the meat from the clam shells and split the shells into two. Place the four half shells on a cookie sheet. Chop up the clam meat and place in a bowl with the bacon mixture and browned crackers. Mix all together. Melt the earth balance in microwave and pour over the clam mixture. Mix well. Place the stuffing into the 4 shells and bake at 350 for 10 minutes.
