Roasted Sweet Potato Soup with Curried apples

Ingredients
2 1/2 lbs sweet potatoes, 3 or 42 Tablesoons olive oil1 medium onion, slicedsalt and pepper to taste1 red bell pepper, thin sliced2 jalapenos, thin sliced and seeded3 garlic cloves, coarse chopped4 cups low sodium vegetable broth2 tsp white wine vinegar1 tsp honey1/4 tsp curry powder1 small granny smith apple, diced1/4 cup low- fat plain yogurt
Directions
preheat oven to 400.
Roast potatoes on baking sheet for 1 hr, or until soft.
Cool, then remove skins.
In large pot, heat oil on medium heat, add onion, salt and pepper, cook until soft, carmelized about 20 minutes.
Add peppers and garlic- cook 5 minutes then add potatoes and broth. Bring to a boil, reduce and simmer 20 minutes.
Puree in batches.
In small pot bring honey, curry and vinegar to a boil, add apples and stir one minute. Remove from heat.
Serve soup with some of the apples and yogurt.
Makes 6 servings.
