Ingredients
1 Tbsp Coconut Oil1 Med Onion, diced4 Cups Vegetable Broth, low-sodium2 Cups Coconut Milk, unsweetened4.5 Cups Frozen Vegetables, Stir fry mix2 tsp. Curry Powder.5 tsp Dried Red Chile flakes
Directions
Cook onion in coconut oil, until translucent. Add vegetable broth, coconut milk and frozen vegetables. Bring to a boil, turn heat down until simmers. Add spices and simmer 20 minutes.
