4 beets with greens (chop greens)3 stalks of celery chopped1 large carrot sliced in rings1.5 onions choppedcelery greens from inner stalks choppedthyme 5 stalksgarlic cloves 2fresh parsley 1 c shopped6 peppercornsjalapeno peppper chopped (optional)beet juice 4 oz.cider vinegar 1/2 c4 T salt2 t sugar
Chop all vegetables escept beets. Remove beets after par boiling 5 minutes. Peel outside skin and grate beets. Add back to soup. Boquet garni bay leaf, parsley thyme and pepper corns. After vegetables tender, add beet juice, cider vinegar, sugar and salt to taste.
