1 (11oz) can white shoepeg corn, drained & rinsed1 (15oz) can black eye peas, drained & rinsed1 (15oz) can black beans, drained & rinsed1 (10 oz) can Rotel tomatoes, with juice3 ripe avocados, diced2/3 c. red onion, chopped1/4 c. olive oil1/4 c. red wine vinegar3 cloves garlic, minced1/2 tsp. salt1 tsp. cumin2/3 c. cilantro, choppeda few dashes of tabasco (optional)
Combine all ingredients, adding avocados last, and toss gently. Refrigerate for 2 hours or more for best results!
