Cream of Broccoli Soup

6 reduced sodium chicken bouillon cubes1/2 c. chopped onion28 oz broccoli florets3 T. olive oil3 T. flour3 c. almond milkpepper to taste
Using bouillon cubes, make 6 cups of chicken broth. Add onion and broccoli to broth, bring to a boil and let simmer until broccoli is tender. In several batches, blend mixture in blender.
In a large saucepan, heat and stir together oil, flour and pepper. Slowly add almond milk, and then broccoli mixture. Heat until soup bubbles.
If desired, top with cheese (not included in nutritional facts).
