Spicy (Vegan) Sloppy Joe filling

1 large yellow onion, chopped3 Tbsp minced garlic1 bell pepper, seeded and chopped1 Tbsp (Hot Mexican) chili powder1/2 can Fire-roasted tomatoes w/garlic1 cup corn1/2 cup BBQ sauce16oz chopped mushrooms1.5 cups vegetable broth2 Tbsp (reduced sodium) soy sauce1 Tbsp chipotle chile in adobo, minced1 Tbsp mustard2 tsp light brown sugardash salt2 dashes black pepper1 Tbsp Liquid Smoke
1. Place the onion, garlic, bell pepper, chili powder, tomatoes, corn, mushrooms, BBQ sauce, and veggie broth in the slow cooker. Mix until well combined.
2. In a small bowl mix the soy sauce, chipotle chile, mustard, brown sugar, salt and pepper. Pour over ingredients in the crock pot. Stir until combined.
3. Cover and cook on low for about 4 hours.
4. Stir in the Liquid Smoke. Adjust seasonings if needed.
5. Serve over carb of choice (not included in nutrition info).
