Apple Craisin Muffins

Ingredients
1 c. whole wheat flour3/4 c. oats1/2 tsp salt3 tsp baking powder1 medium apple, grated*1 c. milk1 egg lightly beaten3 tbsp. oil3 tbsp. honey (or apple juice concentrate for sugar-free)1/2 c. craisins
Directions
Preheat oven to 400 degrees. Combine dry ingredients. In separate bowl combine wet ingredients and fruit. Make a well in the dry ingredients and add wet ingredients. Stir just until moist. Spoon into oiled muffin cups and bake 15 to 20 minutes. Makes 12 muffings.

*Grate apple just before using to prevent browning.
