Mock Potato Salad

Ingredients
1lg head cauliflower1 C onion diced1 C celery diced1 C nonfat greek yogurt1/2C miracle whip light6 lg hard boiled eggs diced (only use 3 yolks)1 sm red pepper (optional) not included in nutritional profile
Directions
Cook cauliflower until tender but not mushy. Cool and cut into bite size pieces. Mix with remaining ingredients add salt and pepper to taste, refrigerate.
