Kielbasa, white bean and kale soup

¾ lb or package of low fat or turkey kielbasa3 cloves garlic, minced¾ cup onion, diced1 stalk of celery, diced2 lrg carrots, sliced2 med potatoes, cubed4 cups water1 can chicken broth, low sodium¾ bunch of kale2 cups cooked white beans (or 1 can, drained)1 tsp salt½ tsp black pepper
Saute kielbasa until browned in your cooking pot. Remove kielbasa and set aside. Saute onions and celery in leftover oil from kielbasa for 5 minutes. Add garlic and sauté for 1 or 2 more minutes, making sure not to burn. Add carrots and potatoes to pot and cover with water. Add salt. Bring to a boil and then reduce heat and let simmer for 20 minutes or until carrots and potatoes are semi soft. Add kale, kielbasa and white beans and simmer another 10 to 15 minutes until kale is cooked and potatoes and carrots are soft. Serve.

Toward the end of cooking I thought this smelled far too "healthy" for my liking, let's face it-didn't gain weight eating like this, but it was yummy!. I used a sweet potato instead of white and I'm glad I did. This is a healthy, low cost way to feed a family. Great recipe, thank you. - 9/9/09
