Sushi Style Wild Rice Salad

Ingredients
Salad:Wild Rice, Trader Joes,1 cup dryEdamame, shelled, fresh, 1 cup Cucumber (peeled), 1 cup, pared, chopped Avocado, chopped Trader Joe's Roasted Seaweed Snack, .5 package, crumbledDressing:*Soy Sauce, 4 tbsp Sesame Oil, .25 1tsp Vinegar - Natural Rice Vinegar, 1 tbsp Water, tap, .25 cup1 tsp crushed gingerWasabi to taste
Directions
Cook the wild rice in 4 cups of water (bring to a boil, cover, and simmer for 40 minutes or until water is absorbed).

Combine cooked rice, edamame (boiled if frozen), cucumber, chopped avocado in a bowl. Mix well. Sprinkle in the seaweed snack.

Combine dressing ingredients and mix well. Pour over and serve.
