Hot and Sweet Pepper Confit

Ingredients
2 tbsp olive oil1 small onion, minced8 hot cherry peppers, seeded and chopped small4 sweet cherry peppers, seeded and chopped small1 small green pepper, seeded and chopped small¾ cup white wine1 tsp sugar¼ tsp saltpinch black pepper
Directions
Heat oil in a large skillet over medium-low heat.
Add onion and cook 10 minutes, until just beginning to colour.
Add all the peppers, wine, sugar, salt, and pepper.
Cover, and cook until wine is almost absorbed, about 60 minutes, stirring occasionally.
Reduce heat to low, uncover and cook, stirring occasionally, until peppers are tender, about 15 minutes.

Serving Size: Makes about 1 cup, 8 (2-tbsp) servings
