Strawberry Cream Cheese Bread

Ingredients
1/2 cup light butter substitute, softened1/2 cup sugar1/2 cup Splenda4 oz fat free cream cheese, softened4 egg whites1 tsp vanilla extract2 cups flour2 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 cup lowfat buttermilk1 1/2 cups strawberries, rinsed, dried & chopped
Directions
1. Preheat oven to 350 degrees F. Spray a 9" x 5" loaf pan with nonstick spray and set aside.

2. In the bowl of an electric mixer, cream butter, sugar, splenda and cream cheese until fluffy. Add egg whites slowly then add vanilla.

3. In separate bowl, mix flour, baking powder, baking soda and salt. Blend flour mixture with butter mixture just until blended. Add buttermilk and stir just until combined; careful not to over mix.

4. Carefully fold in strawberries. Dough mixture will be thick.

5. Bake 50 - 60 minutes or until cooked thru and lightly browned on top.
