6 oz. non-fat vanilla yogurt1/4 cup orange juice1/2 cup Splenda Brown Sugar Blend, packed2 egg whites2 cups whole wheat flour, sifted2 tsp. baking powder1/4 tsp. salt1/2 pumpkin pie spice1 1/4 cup carrots, grated1/4 cup golden raisins
Mix the yogurt, orange juice and sugar.
Add egg whites, and beat well.
In a separate bowl, sift together the flour, baking powder, spice and salt.
Add the wet ingredients and mix well.
Stir in carrots and raisins.
Drop the mixture (heaping teaspoon) on greased baking sheets. Bake at 350 degrees F for 15-18 minutes and cool on racks.
