Curried Cashew Bulgur Salad

Bulgur, dry, 1 cup Water, tap, 2 cup (8 fl oz) Basil, 5 leaves Naturebox Bombay Curried Cashews, 0.5 cupOlive Oil, 3 tbsp *Lemon Juice, 1 lemon yields Salt, .5 tsp*Shallot, 2 tbsp, choppedFresh Chives, 1 tbsp chopped
Combine bulgur and water in sauce pan with a lid. Bring to a boil over high heat, reduce to low, cover and simmer for 10 minutes. Remove from heat and let stand for five minutes. Drain any excess liquid.
Combine shallot, olive oil, salt and the juice from 1 lemon. Stir until combined and add to bulgur. Add cashew blend and chopped herbs. Stir to combine. Chill for 30 minutes or until ready to serve.
Serving Size: Makes approximately 6 1/2-cup servings.
