Oatmeal Belgian Waffle

1/2 cup old fashioned oatmeal1 whole large egg1 large fresh egg white1/4 teaspoon baking powder1/4 cup plain non fat yogurtSplash of cold water
Preheat a Belgian waffle iron.
Blend all ingredients with a stick blender and blend until smooth.
Let batter stand a minute or so.
Cook in hot waffle iron for about 8 minutes.
Top with fresh fruit ... or the toppings of your choice. I like peanut butter and honey on mine... keeps me full for hours.
Serving Size: Makes one Belgian waffle.

Great recipe, have been looking for one with all oatmeal since having one at a bed and breakfast. This one cooked up very nicely in my waffle iron. I even did it with all egg whites and it was fine. I added cinnamon and vanilla extract. Have done many times,& pumpkin instead of yogurt works too! - 6/26/17
