Red Kidney Beans My Way

Half of one Med. Onion Half of a Jalapeno w seeds if you like it hotOne Roma Tomato2 cloves of garlic1 tsp. of cumin 1 table spoon of ginger (fresh is best) One Can of Red Kidney Beans 1 tsp. Olive Oil
Sauté onions, garlic, cumin, salt, and Jalapenos until the onions go translucent.
add the tomato ( I blended mine but it works fine chopped too)
Let this cook on med. heat for 1-2 minutes
Add the beans drained and rinsed with a can of water. Bring to a boil and cook for about 10 min.
Serving Size: Makes 4 searvings
