lime spanish rice with veggie burger

Ingredients
2.5 C. veggie burger crumbles1 C brown rice1 1/2 tsp. butter2.5 Tblsp. light margarine1/2 C. chopped green pepper1 C. green onion chopped4 cloves garlicsaltchili powder or chipotle pepperblack pepper1/4 C. lemon juice1/4 C. lime juice2 Tblsp. sour cream... reduced is okay too4 Tblsp. parmasean cheesecilantroparsley
Directions
In hot skillet melt butter & margarine. Add choppped onion; green pepper; garlic and sautee until green pepper is bright in color then add cilantro and parsley. Stir in lemon juice and veggie burger crumbles. Stir in lemon juice add salt, pepper, chili powder or chipotle pepper to taste. Add 1 tblsp. taco seasoning (if desired). Add 1 C. brown rice and 1/2 C. water. Stir all together. Turn heat to low and let cook covered for 8 minutes. Add sour cream and parmasean cheese (or whatever kind of cheese you prefer) let cool for a few minutes and enjoy with a nice salad; guacamole and chips.
