Paleo Sweet Potato, Onion, Spinach, Sausage Breakfast Muffins

1 lb natural pork sausage1 large sweet potato, diced1 onion, diced1 Tbsp minced garlic3 cups spinach, chopped10 large eggs1 2/3 cup egg whites salt and pepper to taste
Cook pork sausage, set aside. In grease, cook potatoes and onions until soft. Add garlic, cook until fragrant. Mix in spinach and divide among 24 silicon muffin cups (sprayed with olive oil). Mix egg whites, eggs, salt and pepper. Pour over potato mixture in cups. Bake at 375 for 25 - 30 minutes.
