Low Carb Cream Cheese Pancakes

Ingredients
2 oz. cream cheese2 eggs1 tsp. Swerve1/2 tsp. vanilla extract1/8 tsp. xanthan gumpinch salt
Directions
Place all ingredients into the container of a blender. Process until smooth.

Heat a skillet or griddle over medium heat. Grease with coconut oil. Pour 1/3 of the batter onto hot pan. Cook approximately 2 minutes, flip, and cook one minute more. Repeat with the remaining batter.
