1 Tbl extra virgin olive oil2 cup onion, chopped1 cup carrots, sliced2 tsp chili powder1 tsp crushed red pepper flakes1 whole bay leaf2 tsp garlic3.5 cup (1 can) crushes tomato6 cups beans (red kidney/great northern/black beans) 2 cups corn2 cups salsa verde1 cups water
Heat oil
-Add onion, carrots, garlic, chili powder, red pepper flakes and bay leaf.
- Sauté over med heat until onion is translucent.
Add remaining ingredients.
Cook about 1 hour, adding more water as needed if you want a thinner chili.
Remove bay leaf.
Serving Size: makes eight 2-cup servings
