White Garlic Chicken Lasagna

Ingredients
6 Lasagna noodles3 skinless/boneless chicken breasts8 ounces fat free cream cheese 1 cup of fat free mozzarella cheese1 stick of unsalted butter1/2 cup of flour1 large onion1 cluster of garlic (about 10 cloves... or more if you want)1 cup low-fat milk1/2 grated Parmesan cheese2 tbl Italian seasonings1/2 tsp cayenne pepper1 cup broccoli florets (chopped small)
Directions
Prepping!

1) Cook lasagna noodles as per package instructions and set aside. Be sure to rinse with cold water to prevent sticking!

2) Cook chicken using your preferred method, and then shred using two forks.

3) In a large bowl combine chicken, cream cheese, and 1/2 cup mozzarella. Cover and leave in fridge until needed.

4) Steam brocolli till fork tender.
Sauce Time!

1) Roughly chop onion and garlic and put in a microwave safe bowl. Add just enough water to cover. Cover tightly with clear wrap then microwave for approximately 8 minutes. You may want to leave this in the microwave for a few minutes to cool down before trying to pick it up! Then use an immersion blender (or regular blender) to puree.

2) Melt butter in a medium sized pot, and then add flour. Stir well to incorporate all the flour. Add puree and milk. Continue stirring and allow to thicken. Salt to taste.

3) Add Parmesan cheese, Italian seasonings, and cayenne pepper.

Layer your Lasagna in a 9 x 13 inch pan starting with sauce to prevent sticking! Then add noodles, chicken/cheese mixture, broccoli, then sauce. Layer until you've used everything.

Put it in an oven till hot and bubbly!
