Tofu Spinach Omelet

Ingredients
1/4 cup spinach1/3 of a block of tofu (1/4 cup)2 eggsplash of soy milkmargarine
Directions
Crack the eggs in a bowl and pour the soy milk and 1 tsp of margarine. Whisk until creamy and fluffy. Heat the pan and melt 1 tsp of margarine in it. shred the spinach and cut the tofu up into bite size pieces. Whisk into the egg mixture and pour into the pan. Cook like you would a regular omelet.
