1 3/4 cup All Purpose Flour1 1/2 tsp baking powder1/2 tsp salt3/4 tsp cinnamon1/4 cup oil2/3 cup granulated sugar1 egg1 cup Rice MilkFor the Cinnamon-Sugar Topping:1/4 cup Earth Balance, Melted1/3 cup granulated sugar1 tablespoon cinnamon
Preheat oven to 350 degrees. Whisk together the flour, baking powder, salt, and cinnamon. In separate bowl, whisk together oil, sugar, egg, and milk. Coat muffin tins with cooking spray and divide batter up evenly. Bake for 15-18 minutes. Remove muffins from pans while still hot. In small bowl. melt butter. In another small bowl, combine sugar and cinnamon. Dip each muffin first into butter and then into sugar mixture. Let cool for a few minutes so that butter and sugar will harden slightly before serving.
