Paleo blueberry muffins

2 and 1/2 cups almond flour1TBSP coconut flour1/4 tsp salt1/2 tsp baking soda1TBSP vanilla extract1/4 cup coconut oil1/4 cup pure maple syrup1/8 cup canned lite coconut milk*1/8 cup water2 eggs1 cup fresh or frozen blueberries2 TBSP ground cinnamon*if using thinner coconut milk from a carton! omit water and increase coconut milk to 1/4 C
Preheat oven to 350*
In a mixing bowl, combine the flours, salt, baking soda, vanilla, eggs, and coconut oil.
Add the maple syrup. Coconut milk, water, and cinnamon.
Fold in blueberries.
Spray or line muffin tins, and bake 12 glorious Paleo blueberry muffins for 20 to 25 minutes!
