Curried Egg Casserole

Ingredients
1/2 Cup Egg Whites1 Egg2 Vegetarian Sausage (Or any type)2 cups Broccoli florets 6 oz Plain non fat Greek Yogurt2 slices of low carb bread1/2 tsp curry powder2 tbsp chopped onion1/2 tsp saltBlack Pepper (optional)1/4 tsp baking powder
Directions
Cook broccoli in a microwave safe bowl covered for 3 min our until tender
In a separated bowl, combine yogurt and spices. Once combined, add in the eggs.
Slice the sausage and cut the bread into cubes
Spray with non-stick cooking spray the loaf tin and cover the bottom with the bread cubes, sausage and cooked broccoli.
Add the egg mixture and cook in a preheated 350 F oven for 35 - 45 minutes or until the egg is completely set

Serving Size: Makes 1 8x4 loaf tin
