Cheese-less Egg Muffins

1 Cup Egg Whites 3 large Eggs1/4 + 2 Tbsp of pico de gallo4 slices of low fat deli hamSalt and Pepper to taste1 tsp of baking soda1/4 cup of water (or milk or cream)
In a large bowl combine eggs and egg substitute with salt, pepper, water and baking soda. Finely cut the deli ham and combine it with the egg mixture, as well as the pico the gallo (mine did not have chili, just grated onion and tomatoes).
Evenly divide into 6 in a large muffin tin. Bake at 350 F for 20 minutes, or until the egg is completely set and puffed.
