(1) jalapeno(1) 4-oz can diced green chile(4) large eggs3 oz grated pepper jack cheese
Preheat oven to 350 degrees.
Finely dice and pan roast jalapeno until tender crisp. S
Separate eggs; mix egg yolk, jalapeno, can of diced green chilies (drained), and grated pepper jack cheese.
Beat egg whites until soft peaks form, fold into green chile mixture.
Pour ingredients into non-stick 9-inch pie dish and place in oven 25 minutes.
Serve while hot or let cool and store. Reheat buy placing slice on microwave safe plate, covered with damp paper towel/napkin, and microwave on high 25 seconds.
