White Bean Soup

Ingredients
2 Tbs Extra Virgin Olive Oil 1 tsp each: rosemary, coriander, marjoram, oregano, sage, basil and thyme OR 2 Tbs Italian spice blend3 cloves Garlic1 medium Onion, chopped1 cup sliced carrot1 cup diced celery1 cup diced potato (1 med potato)4 cups vegetable broth 6 oz Grated Parmesan 28 oz diced tomato 4.5 cup cannelloni beans (3 cans, drained and rinsed)
Directions
Heat olive oil in a large heavy bottom stock pot.
add spices and 1/2 cup broth and simmer 1 minute.
Add onions, carrots, potato and celery; sauté 5 minutes.
Stir in the tomatoes, beans and remaining broth.
Cover and continue cooking 1 hour.
Sprinkle 1 tablespoon grated cheese over the top of each serving.

Serving Size: makes six 2-cup servings
