Zucchini Lasagne Rollups

Zucchini1 large can diced tomatoes8oz. Ricotta cheese3 oz. grated mozzarella cheese1 oz. Parmesan cheese2 T. Olive oil1 eggSaltPepperFresh basil2t. Pressed garlic
Cook canned diced tomatoes with garlic and olive oil for 15 minutes. Add fresh basil when done. Slice zucchini length wise (8 slices). Spray with oil and pan cook until golden and soft. Cool zucchini. Mix cheeses, egg, and salt and pepper together. Divide cheese mixture evenly over each zucchini slice. Place in 8x8 glass pan and pour tomato mixture on top. Bake at 350 for 25 minutes.
