Golumpki (Cabbage & Ground Beef) Soup

1 pound extra lean ground beef 1 can (28 ounces) stewed tomatoes1 can (14 ounces) beef broth, low sodium½ medium head cabbage, shredded1 large onion, chopped3 celery ribs, chopped2 carrots, chopped1 tsp. minced garlic½ Cup Brown Rice (Soak dry rice in cold water 3 hrs. drain)2 tsp. au jus base3 cups waterPepper to taste
Soak rice in cold water at least 3 hours; drain.
In a large soup pot, cook beef over medium heat until no longer pink; drain.
Add the onions, carrots, celery and garlic and cook 10-15 minutes.
Add cabbage, tomatoes, broth and rice; bring to a boil.
Mix 2 tsp. au jus base with water. Add to soup until desired consistency.
Reduce heat; simmer, covered, for about 2 hours or until vegetables and rice are tender. Stir in pepper.
