Chicken Fried Rice with Broccoli

1 3/4 lb boneless skinless chicken breast, trimmed3 cups uncooked white rice6 Tbs light butter6 large eggs2 2/3 cup peas2 cups julienne carrots2 cups chopped broccoli2 cups chopped white onion6 oz soy sauce2 oz lemon juice
Cook rice according to package directions, using 3 Tbs light butter. Set aside.
Scramble the eggs, season with fresh ground black pepper and cook over medium heat until the eggs are set.
Add chopped vegetables and remaining butter.
Cook over medium heat, stirring frequently, until carrots are almost tender. Set aside.
Cube chicken breast to 3/4" dice.
In a non-stick skillet, brown chicken breast in 2 oz lemon juice.
Season with fresh ground black pepper.
Add rice, eggs and vegetables.
Serving Size: makes eleven 2-cup servings
