Rapini with garlic and pine nuts

1 large bunch Rapini (aka broccoli raab), rinsed and thick part of stems removed2 Tbsp vegetable (canola) oil1 large onion, cut into wedges1 garlic clove, minced1/4 c pine nuts, toasted (can be toasted in a fry pan w/no oil until light brown)
Blanche the rapini (boil) in 2 batches for about 5 minutes then plunge into ice water bath in a large bowl to arrest cooking. Drain and put aside.
Toast nuts and put aside.
Heat oil in pan and sauté garlic and onions till golden. Add rapini and sauté till heated through, stir in pine nuts.
Season with salt and pepper, serve.
Serving Size: Makes 6 servings about 1/3 c each
