1 lb extra lean ground beef2 onions, diced1 green bell pepper, diced1 jalapeno, diced1 (14 oz) can of Rotel tomatoes2 (8 oz) cans reduced sodium tomato sauce2 tbsp cumin2 tbsp chili powder1 tsp salt1/2 tsp cayenne pepper1/2 tsp paprika1 (14 oz) can of kidney beans, drained and rinsed1 (14 oz) can of black beans, drained and rinsed1 cup water
brown the meat with the onions, bell pepper, and jalapeno until the meat is fully cooked. Drain any excess fat then add to crock pot or dutch oven. Add the can of Rotel tomatoes, the rinsed black and kidney beans, all spices, and the tomato sauce. Stir together, then add water until the desired consistency is reached. Cook in a crock pot for at least an hour, or up to however long you'd like for flavors to meld and all ingredients to heat through (I have let it go for entire work days before, with wonderful results).
