Vegetarian Sausage and Kale soup

Ingredients
2 tbsp olive oil1 Onion diced4 Cloves Garlic diced6 Carrots sliced3 Celery stalks sliced1/2 pepper diced (I used yellow)1 large tomato chopped4 Morningstar Sausage Patties defrosted (152g)8 kale leaves chopped (cut out the stem)32 oz vegetable stocktsp dried basil4 bay leaves1/2 tsp dried oregano1/2 tsp sea saltpinch black pepperpinch cayenne peppergrated parmesan cheese
Directions
In deep frying pan or dutch oven heat 1 tbsp oil on medium high heat. Saute onions and garlic 4 minutes or until they start to get clear. Add carrots, celery, pepper and saute 5 more minutes. If starting to stick add more olive oil to pan. Add chopped veggie sausage and kale and tomato. Heat for another 10 minutes. While heating add salt, pepper. cayenne pepper basil and oregano or any other of your favorite spices. Add vegetable stock and bay leaves heat on low for 20 minutes.
Top with fresh grated parmesan to serve.
