Mom's Indian Yellow Curry

Ingredients
TOPPINGS:Crosse and Blackwell Chutney1/2 cup raisins, soaked in water1/2 cup chopped peanuts1/2 cup pineapple tidbits3 hard boiled eggs6 slices bacon (consider turkey bacon) or bacon bits3 Tbs coconutCURRY:3 Tbs butter1 small onion, minced1 1/4 Tbs curry powder3 Tbs flour3/4 tsp salt3/4 tsp sugar1/8 tsp ginger1 cup chicken broth1 cup skim milk2 cups cooked chicken, turkey or shrimp1/2 tsp lemon juice1 cup uncooked rice, consider basmati or jasmine1 cup green lentils
Directions
Cook rice and lentils according to package directions and soak raisins in warm water. Meanwhile, melt butter and saute onion with curry powder in a large skillet. Blend in flour and other seasonings. Stir and simmer until smooth and bubbly; remove from heat. Stir in broth and milk, then add protein. Bring to a boil, stirring constantly then simmer for one minute. Add lemon juice, then spoon over half rice, half lentil base.
Serve condiments at the table and allow diners to top their curry to their liking.
