Apple Celeraic Slaw

Ingredients
3 C. peeled, grated apple2 1/2 C. peeled, grated celeraic (celery root)2 Tb. orange juice1 lemon1 Tb. olive oil1/2 C. dried cranberries1/3 C. chopped fresh basil1/4 C. minced red onion1/4 tsp. salt
Directions
In a large bowl, grate the lemon to make about 2 tsp. of zest. Juiice the lemon and add 3 Tb. lemon juice. Add the grated apple and stir well. Add the remaining ingredients and toss to mix. Serve at room temperature or chilled.
