2 medium zucchini, cut lengthwise and in quarters 1 yellow squash, cut lengthwise and in quarters 1/2 yellow onion, sliced1/2 red pepper, large dice2 cups dry Minute Whole Grain Brown Rice2 cups water4 Tbsp soy sauce4 Tbsp Country Crock Reg Spread3 Tblsp Extra Virgin Olive Oil2 large eggs
put rice and water in microwavable bowl. Follow directions to cook. Put 3 Tbsp olive oil in pan. Heat, and then add veggies. Cover on med to med high heat five min. Uncover and stir- cover again for five min. Uncover and add soy sauce. stir and leave uncovered. Stir and coat veggies. Make a well in middle. Break egg and cook in center of well made. Mix into veggies. Do again with second egg and stir into veggies. Take off heat. Measure 2/3 cups rice onto center of plate. Add quarter of cooked veggies on top of rice. Serve.
