Soup au Pistou with Chicken

Ingredients
1.5 Tbsp extra virgin olive oil2 medium onions - diced1 clove garlic, crushed1 large boneless, skinless chicken breast (~8oz)2 Tbsp Better than Bouillon Vegetable Base, reconstituted with water to 6 cups vegetable stock1 tsp. herbs de ProvenceSalt & pepper to taste1.5 c. sliced zucchini (approx. 1/2 of a large squash)1 1/3 c. Trader Joe's Frozen Petite Peas1 1/4 c. frozen sliced carrots
Directions
In a large pot, saute chopped onions and garlic in olive oil until soft, add remaining ingredients. Bring to a boil, then reduce heat, cover, and cook for 20-30 minutes.
