Slow Cooker Loaded Baked Potato Soup

Ingredients
Potato, raw, 14 medium (2-1/4" to 3-1/4" dia.)Onions, raw, 2 large choppedKroger Fat Free Less Sodium Chicken Broth, 9 cupsChopped garlic, 6 tspButter, unsalted, 1/2 cupSalt, 4 tspPepper, 2 tspBacon (fried) 12 slices20-30 baby carrots choppedHalf & Half (Kroger brand), 2 cupsCheddar Cheese, Mild, shredded (Kroger), 2 cupsGreen onion, fresh, 6 tbsp
Directions
Mix first seven ingredients in crockpot; cover & cook on HIGH for 4 hours or LOW for 8 hours (potato should be tender).

About 1/2-3/4 into cooking, mix in bacon and carrots. You may do this from the beginning if it easier as well.

Take part of potatoes out and mash slightly; mix back into soup and stir - soup will be slightly thickened. Stir in cream, cheese and green onions.

Top with sour cream & shredded cheese, if you wish.
