Cauliflower Alfredo-ish Sauce

2 heads cauliflower2 tablespoons Olive oil8 cloves garlic, minced1 cup vegetable broth1 tablespoon italian seasoning1 tablespoon onion powder2 cups sliced mushroomsSalt and pepper to taste(Optional) 1 cup almond milk(Optional) chopped fresh basil
Separate florets from cauliflower head
Boil in water for 15 minutes
Sauté garlic in olive oil 2-3 minutes
Add cauliflower to blender along with 1 cup vegetable broth, garlic and olive oil it was sautéed in, and seasonings.
Blend for 2 minutes or until creamy and smooth.
You can adjust consistency by adding almond milk if needed
Add salt and pepper to taste
Sauté mushrooms in olive oil and add to sauce
Serve over cooked pasta
Garnish with chopped fresh basil if desired
